Ndoko Beans
Beans and Rice recipe might literally be a universal meal, but don’t be fool – as George Orwell rightly said in his famous book, The Animal Farm, all animals might be equal, but some are more equal than others. Same phrase can be applied to the recipe you are about to see…all rice and beans recipe might be equal, but…anyway, no need to belabour the point, you get the gist. Again, there’s never anything but accolades whenever and wherever I serve this dish.
And so I present…
Ndoko Beans (ndoko, in my language, means show-off, or beautiful -depending on the context under which the name is used)
- 2 cups of African red beans -similar to black-eye beans but reddish brown in colour – (rinse – checking to make sure there are no tiny pebbles in it)
- 2 cups of long-grain rice (rinse well and set aside)
- one slice of stockfish – dry cod (can be found in any exotic food store)
- smoked fish – not mackerel – or tiny chunks of beef.
- 8 firm fresh tomatoes (cut into big chunks)
- 3 fresh chilli (blend)
- two onions (chopped in big chunks)
- 4 tbs of palm oil, and 4 of vegetable oil
- two cubes of chicken or beef stock
- a litter of water – or as much as it needed
- Salt
Put the beans in a medium-sized deep pot, add stockfish, pour in the water and bring to boil until the beans is half cooked – should be soft but not mushy when pressed between two fingers. Add the rice –adding more water if needed – and cooked until completely soft and the water is almost dry. Meanwhile, in another pot, bring the oil to oil, add the onions and fry for a couple of seconds, add the tomatoes, chilli, smoked fish or beef, stock cubes, salt and chilli – turn once gently with a wooden spatula, then let it cook for about ten minutes. Make sure that the beans mixture is completely cooked and the water dry. Turn the tomato sauce into the beans and rice – taste to make sure there is enough salt, if not add a bit more; then turn the heat very low and leave the mixture to cook gently for another 5 to ten minutes. And voila! Your Ndoko beans is ready.
