Hello people,

A couple of days ago, my daughter turned 14 years old.  As is usual when any of my children’s birthday falls on a school day, I decided to welcome her back from school with a little something special.  And so, I created the following menu and named it Faithful.  The name is as a result of the heart-felt gratitude of a mother in honour of a loving God who has been unstintingly faithful to her and her beloveds.

The piece around which the recipe is woven is Guacamole – a well-known dip/snack made from Avocado pear.  As with every menu yours truly prepares, I have personalised this dip and brought a little something into it to give it the Sarah ommph.  From the look on my daughter’s (and my son’s) face it was a huge success. This was the outcome.

For the Guacamole:

Two avocado (should be well soften), de-stoned and mashed using a fork

Three spring onions (finely chopped)

A handful of fresh coriander leaves (finely chopped)

One – or two (depending on preference) – fresh chilli (seeded and finely chopped)

3 firm fresh tomatoes (seeded and roughly chopped)

Juice from one lime

Salt and black pepper to taste.

Mix all the ingredients in a bowl and set it aside.

 

For the fish:

Half a kilo of fresh salmon steak (pat dry to remove any liquid)

A cube of fresh ginger (crushed)

Two garlic cloves (crushed)

A tablespoon of green pesto (mix it with the crushed ginger and garlic)

Salt and black pepper to taste.

Lay the fish out on a flat plate.  Sprinkle the salt and pepper on each.  Spread dollop of pesto on each and set it aside for a ten minutes.

Bring a frying pan to fire.  Drop a dollop of butter in it and when it’s melted, put the fish steak – pesto side up – and gently steam fry until the fish is cook; approximately three minutes.

Put the guacamole on the centre of a flat serving dish, surround one side with nachos and sliced grapes and put the fish on the other and…la voila!

P/S To steam-fry – put a cover on the pan – this will steam the fish and fry it at the same time – great way to prevent the fish from drying out.
